Aviator is family-roasted. Just two of us roast every batch by hand — a father and son — on a single drum roaster at The Roost on Bainbridge Island. Nothing leaves The Roost we wouldn't pour for ourselves.

Our dark roast, Lt. Jackson's Dark Roast Rescue, is named for Lt. William "Bill" Jackson — a P-38 Lightning pilot of the 364th Fighter Group. The aircraft above our banner is his. Every quarter the Club flies a different route: rotating single origins and seasonal roasts, chosen for the season and sent the week they come off the drum.

Four times a year we open The Roost. Members come cup the new lots, watch a batch come off the drum, and meet the two people who roasted it. Coffee in hand, no agenda.

Every tier is invited — the events are the community, and the community is the point. Captains get priority RSVP when a session fills up. Everyone else is just as welcome.

How often will I get coffee?+

Every quarter — once every three months. One shipment, roasted the week it goes out. We'll email you before each one ships so there are no surprises.

What's the shipping situation?+

Shipping is included in every tier, every quarter. We pack and ship within two days of roasting so it arrives as fresh as it left the drum.

How do the roasting events work?+

Four times a year we host members at The Roost on Bainbridge Island to cup the new lots and watch a batch roast. Every tier is invited; we'll send dates and an RSVP link. Captains get priority RSVP when a session fills.

Can I skip, pause, or cancel?+

Anytime, from your account. Skip a single quarter, pause indefinitely, or cancel outright — no calls, no retention scripts, no penalty.

Whole bean or ground?+

Your choice on every bag. Pick whole bean or your preferred grind when you join, and change it anytime before a shipment.
