Aviator is family-roasted. Just two of us roast every batch by hand — a father and son — on a single drum roaster at The Roost on Bainbridge Island. Nothing leaves The Roost we wouldn't pour for ourselves.
Our dark roast, Lt. Jackson's Dark Roast Rescue, is named for Lt. William "Bill" Jackson — a P-38 Lightning pilot of the 364th Fighter Group. The aircraft above our banner is his. Every quarter the Club flies a different route: rotating single origins and seasonal roasts, chosen for the season and sent the week they come off the drum.
