Two people. Every batch. By hand.

Aviator is family-roasted. Just two of us roast every batch by hand — a father and son — on a single drum roaster at The Roost on Bainbridge Island. Nothing leaves The Roost we wouldn't pour for ourselves.

Our dark roast, Lt. Jackson's Dark Roast Rescue, is named for Lt. William "Bill" Jackson — a P-38 Lightning pilot of the 364th Fighter Group. The aircraft above our banner is his. Every quarter the Club flies a different route: rotating single origins and seasonal roasts, chosen for the season and ready for pickup the week they come off the drum.

Pickup · Hangar release day

At the Hangar, Kingston

Collect at the stand during opening hours on the calendar date. The coffee is on us. Most releases are on Wednesday; September’s Hangar pickup is Thursday after Labor Day.

Pickup · Saturday morning

Open house at The Roost

Collect your flight and stay while we roast on the scheduled release morning. Other visits are by appointment.

Twice a Year

Two gatherings at the roastery.

Join us for food, drink, and conversation with your neighbors at the autumn and spring parties. Scheduled quarterly pickup mornings are listed on the calendar. Other visits are by appointment. Request a visit.

The Autumn Party is November 7, 2026. The Spring Party is April 24, 2027. Members can bring guests.

How often will I get coffee?+

Four bags per quarterly release. Your calendar shows the billing and pickup dates. The first release is December 2026.

Where do I pick up my coffee?+

Roast Club is pickup only for now. Choose the Hangar in Kingston or a scheduled pickup morning at The Roost. See the release calendar for dates. Other Roost visits are by appointment.

How do the roasting events work?+

The autumn and spring parties bring members and guests together. Quarterly scheduled pickup mornings are a chance to collect coffee while we roast. Other visits are by appointment; email bill@aviatorcoffee.com to arrange one.

Can I skip, pause, or cancel?+

After your first bill, skip a quarter, pause future flights, or request cancellation from your account. To change or stop your first flight, contact the crew before its billing date. Already billed flights need a crew review.

Whole bean or ground?+

Your choice on every bag. Pick whole bean or your preferred grind when you join, and change it anytime before a flight.
